We Like It Raw: Do you know the muffin man?

  • rawfaith · 1 year ago
oh my gooooodness.... those look SO good! if I weren't on an anti-fruit and nut plan right now, I would SO be making these! In any case, I am going to save the recipe and make them in a few months! yummm.

These look so delightful. It really makes a difference how the dessert is presented, too. You're bringing up all the excitement I'd feel as a kid looking at the fresh baked muffins in their little cups! This makes sense! I've had brazil nuts an mulberries and it was so good. I can't wait to make these!!! Thank you Shannon, for taking the time to write it all out for us!!!

This looks so amazing! I'll have to find substitutes for the nuts (little one is allergic), but I can 't wait to try this experiment. Thanks for posting it!
  • wyldegirl · 1 year ago
candice- funny i had just posted this (below) if you're curious as to nut substitutes, i used ground coconut, hemp seeds and extra flax meal. . . i'll let you know how it came out. . . oh and i added lemon and cinnamon (i remember those two ingredients from my mum's perfectly baked ones during childhood!!)
much love and thanks to shannon for this delectable (and perfect for brunch) recipe!

Jenny, thanks for answering Candice's comment. Your suggestions sound like they would work beautifully, especially since you can make "milks" out of seeds, too (Rawbin likes to use the leftover coconut she strains out of her "milk" to make other dishes). Hope your muffins turned out to your liking. Have fun in Cali :-)

so i'm leaving for california and my family has been requesting all sorts of goodies to tide them over for the next few months. . . so i was psyched to see this post . . . and immediately made my own (tweaked so it's nut-free) version of these. . . and they're in the dehydrator as we speak! Shannon - endless creative woman- you rock.
    xx Jenny

U need to write a book. your recipes are amazing!! Ques: I love frozen berries but don't know if they are technically raw? how can you know if frozen veggies/fruit are raw?
  • shannonmarie · 1 year ago
Okay, so the frozen berries may not be technically raw, although I've heard that Cascadian Farms doesn't cook any of its fruits and veggies before freezing them. Anyone know if that is true?

I freeze a lot of fruit myself, but if you are worried about what kind of change results in the freezing process, you can always use fresh berries. I just didn't have any fresh ones when I was craving them.

Another big hit. Muffins were my fav back in the day. Yum!

YES!!! I've been waiting for this recipe ever since I saw the pictures on Rawdorable!! I don't have a dehydrator, though, so I'll have to experiment with my oven, or maybe just eat the batter straight up! yum! Great job. :D
  • shannonmarie · 1 year ago
If you are careful not to get the dough too damp, you can just let them set in the refrigerator. The flax will absorb any excess moisture. They won't have that fresh from the "oven" warmth, but they'll still taste good.

shannon! your little incremental cup characters (1/4, 1/2, etc) don't show up on some computers. :( would it be possible to actually type 1/4 instead of allowing whatever word processor to change it into a special characters?

just thought I'd ask because I really want to make these :)
